At Continuing Education’s Summer Youth and Teen Program, both middle school and high school students will experience a variety of engaging and enriching programs. Our unique programs emphasize self-discovery, cognitive reasoning, and cooperative thinking using a hands-on approach.

IN-PERSON PROGRAMS

Digital Photography
Age: 9 - 15 years old

This course offers a creative opportunity for anyone, with or without experience, who is interested in improving their skills in digital photography. Using any digital camera you will examine the concept of exposure, color balance, and composition and lighting techniques. You may explore projects like macro (close-up) photography, landscape, portraiture and learn about post-production editing at HCCC computer lab. The week includes a field trip to a local destination for an on-location photo shoot.

Duration: Monday - Thursday
Dates: July 12, 13, 14 and 15, 2021
Times: 9 a.m. – 4 p.m. (1 hr. lunch)

About the Instructor
William A. Ortega is an educator and visual artist. He received his BFA from New Jersey City University, an MFA from Rutgers Mason Gross School of the Arts and an MPS degree in Digital Photography at the School of Visual Arts. As a first generation Latin American, Ortega's work focuses on the process of assimilation by exploring many themes of identity through his photographic images. Ortega's projects are underlined with a sincere question about place, whether in its immediate physical presence by documenting and inspecting used items, landscapes, immediate family, ancestry and cultural racial history or its psychological impact.

In-Person Baking
END YOUR SUMMER VACATION WITH A BANG! Learn how to make your own cakes, icings, and fillings from scratch in one of our professional bakeshops. The class will teach you techniques and methods of cake decorating and pastry making. Learn about the functions of basic baking ingredients and the proper use of tools and equipment. Students can look forward to preparing delicious sweets like banana walnut cake, dark chocolate cupcakes, and many more. 

Students must wear a Mask at all times inside the kitchens.

About the Instructor: 
Chef Marissa Lontoc - A board-certified educator, Marissa has been teaching for 15 years. She took a break from teaching after graduating summa cum laude from Hudson County Community College (HCCC) with an AAS in Culinary Arts. She has worked as the pastry chef of Skinner’s Loft and Liberty National Golf Course in Jersey City. She also has experience working in Francois Payard Bakery and Nobu in New York City. She currently teaches Advanced Bread classes at HCCC.

Aside from teaching Marissa also coordinates the baking and pastry program of the Culinary Arts Institute. She has developed new courses for the program and was responsible for the program being accredited by the American Culinary Federation. She is involved with student assessment and grant funding. Through her efforts, the Culinary Arts Institute can boast of having the most current kitchen equipment in any educational institution in New Jersey.

VIRTUAL PROGRAMS

Cooking and Baking Week
Age: 9 - 15 years old

A mix of our chefs' favorite menu items. Students will be COOKING and BAKING a different recipe each day. (Chicken paella, steak tacos, cream puffs and apple tarts.)

Baking Week
Age: 9 - 15 years old

Students will learn to bake kid-friendly desserts from around the world. Staring with basic knife skills and kitchen safety, students will develop techniques that build confidence in the kitchen. You can expect to make European classics such as Cream puff and Apple tarts. As well as explore modern bakeshop techniques with chocolate twists and bread pudding.

Cooking Week
Age: 9 - 15 years old

Students will learn to cook kid-friendly dishes with global flavors. Staring with basic knife skills and kitchen safety, students will develop techniques that build confidence in the kitchen. You can expect to make homemade pasta from scratch, a basic marinara sauce and toaster oven pizza. Steak tacos and chicken paella will round out our four-day culinary journey.

About the Instructor - Chef Sean Wilson
Hailing from Hudson County New Jersey, Chef Sean Wilson's culinary career began at an early age. " I used to make dessert for my grandparents when they spent the night " he recalls, speaking of the caramelized apples and ice cream he would conjure up as a youth. Growing up in the shadow of lower Manhattan, food was prevalent in his upbringing. " I always asked my dad ‘where we were going to eat?’ when we went on a 'road trip' for the day with my brother and sister. Sometimes it was fancy but most of the time it was just simple, good food - that's what people need to realize nowadays, good food is good food, whether it's fancy or not." Looking for an audience to try new recipes Sean turned to his scout troop. " we'd go camping all the time - and that's where I fell in love with cooking, I'd try something new every month, and my fellow scouts were always happy to have a hot meal out in the woods." A new American approach to clean eating has given Chef Sean the opportunity to change lives one bite a time. Weather cooking for students in New Jersey public schools or rock stars in the Hampton's, Chef Sean's menus and culinary nuances are sure to please. His latest venture as Chef Owner of CSW Catering is sure to be no exception.

COLLEGE READINESS CLASSES

Get a jump start on the SAT and impress college recruiters with this intensive test preparation program. Learn to use basic problem-solving techniques to strengthen your abilities, while avoiding careless mistakes. Test taking skills will be taught, along with test samples from an actual SAT exam.

About the Instructor
Elissa D'Aries has been helping students apply for colleges in a professional setting since 2015. She has an MA in English Language and Literature from Boston University. In addition to preparing high school students to take the SAT and apply to colleges, she teaches and tutors college level reading and writing.

About the Instructor
Raza Qamar has been teaching in HCCC for more than 15 years. He has taught Math, Computer Science, Chemistry and Physics, which also involves some Biology. Mr. Qamar has taught in NJCU, Saint Peters University, Essex County College, NJIT and at BMCC New York City. He has also taught in Sylvan Learning Center. Raza Qamar worked in ZAMBIA and NIGERIA for four years, teaching teachers.
